Processing technology for UHT treatment of flavoured milks, sweetened concentrated milk, basundi, unsweetened evaporated milk, cream and ice cream mix has been standardised to facilitate long-term storage of these products at room temperature. UHT treated products remain consumable at room temperature for up to 6 months and their acceptability to the consumer has increased significantly owing to the quality and ease of handling they offer.
